Sunday was Day Thirteen of our program. The timeline tells me I should be experiencing bountiful amounts of energy and surreal dreams of food. Well... where's that energy?! I was really looking forward to that part! I'm not saying I'm dragging like a slug, but, I'm dragging. Now, call it excuses, call it irony, but of course we would reach this phase of the program on the same day the we lost an hour of sleep due to Daylight Savings Time. Does anyone else love the time change in the fall and despise the one in Spring?? I take that back, I don't actually despise the one in Spring, but I only like the one in Spring due to the fact that it stays light out beyond 4pm. So after that little rant, here's what we ate on Day Thirteen:
Breakfast: Scrambled Eggs with Spicy Pork and Red Bell Peppers, Apple with Almond Butter
Lunch: Spinach Salad, Butternut Curry Soup, Veggies with Gauc
Snack: Apple with Almond Butter
Dinner: London Broil with Balsamic Glaze and Grilled Asparagus
Snack: Warmed Bananas and Almond Butter
The London Broil and Asparagus marks the first grilling on the deck for 2015! Now that is something I love. And was that dinner ever worth it. All Jason did was salt and pepper both sides of the meat and grill until it had a nice char on the outside and was a medium pink inside. We have a metal grill pan that we throw vegetables on, so for the asparagus we just drizzled with olive oil, salt and pepper, then grilled until tender.
This was actually my first time ever making balsamic glaze, so I googled it and couldn't believe how simple and tasty it was. Please do yourself a favor and never buy balsamic glaze. Balsamic vinegar is much cheaper, and it's all you need to make this glaze. It does reduce quite a bit, so if you want 1/2 a cup of glaze, start with 1 cup of vinegar. Pour it into your sauce pan (preferably one with a light colored bottom so you can see that glaze changing), set the heat to medium high so you have a steady simmer, and stir with a spatula or whisk until it thickens into a syrupy consistency. It does require about 10-15 minutes worth of cook time, but please keep stirring! If you don't stir, it will burn, and that wouldn't make you very happy. If you have leftover glaze, just store in the fridge. Add about a teaspoon of water and heat to reuse!
