Day Fourteen

Two weeks, two whole weeks down!! And I take back my comments about no energy, apparently my brain just thinks that productivity should happen much later in the day this week, much later obviously meaning post 9pm. I guess that's not completely fair... we did go run lots of errands, finish our wedding registries, cleaned house and hosted dinner guests yesterday. But it was about 10:30pm when I gained the energy to design and order our invitations and update our wedding website. Dinner tonight was the first time we've dined with others since the start of our program, and our dear friends Kris and Stacy were both very complimentary of dinner. Kris even went as far as telling me how much he liked the mushrooms and the cauliflower!



Breakfast: Fried Egg with Bacon
Lunch: 2 Bananas
Snack: Orange segments
Dinner: Italian Grilled Chicken, Sautéed Cauliflower, Sautéed Mushrooms, Spinach Citrus Salad, Crispy Potatoes


Confession time: We didn't drag out of bed until 10am, and therefore didn't eat breakfast until almost 11am. We then picked up around the house and made our way out for errands, taking bananas and a bottle of water for each of us. We ate the bananas in between stops, and made our way back to the house by about 4pm. Neither of us were terribly hungry, so we kind of just over looked lunch. Probably not the most ideal, but we were just hungry, not hangry, come dinner around 7pm. And again, I have failed you all in taking absolutely zero photos of this amazing meal prior to devouring it. Sorry about that. Again, an overall pretty simple meal... I placed 4 chicken breasts in a bowl with some basil, thyme, parsley and oregano and let them chill for a few hours. The potatoes are something we like to have often, so I'll be sure to get you some how-to photos on those soon. The cauliflower is super delicious and so simple, just chop the cauliflower and add it to a sauté pan with olive oil, salt and pepper.  Place a lid on the pan, and just give it a good shake every few minutes until toasty and tender. It almost takes on a bit of a roasted, nutty flavor. The mushrooms are just sliced and tossed in a pan with a little bit of clarified butter. Cook and stir every so often until browned. The trick here is not to over crowd the pan, otherwise the mushrooms won't brown.

Summary of the story: good, healthy food should be shared with friends and loved ones. And that when the food and conversation is this good, you sometimes forget to photograph things.
