Day Nineteen felt a little more inspired and energetic, which in turn led to one of the most tasty dinners yet! I worked the morning shift at work Saturday, so I was able to stop at the grocery store on my walk home, fire up the grill and enjoy a delicious new recipe I'll be sharing with you all very shortly!
Breakfast: Omelet with Red Pepper and Spinach, Bacon
Snack: Applesauce
Lunch: Spinach Salad with Apples, Oranges, Pecans, Hard-Boiled Egg, and Veggies with Guac
Dinner: Grilled Green Beans, Shrimp "Tacos" with Mango Pico de Gallo
Snack: Almonds
But really, the Shrimp Tacos were delightfully refreshing and totally broke the "I'm getting bored" phase I was feeling yesterday. I'm not confident how long that'll last, but I'll take it for now. Ultimately, what I feel like I am missing right now is textural variety. I miss the texture of baked goods and grains like rice or quinoa. Most of our meals consist mainly of raw, roasted or sautéed veggies and meat. I could really go for something with more crunch or fluffy texture. I know the crunch part sounds weird since I'm eating things like raw veggies and nuts often, but the crunch of things like baguette, popcorn, or sweet potato chips... that's a different kind of crunch. And things like muffins or pancakes... I miss their fluffy texture. Jason and I have both been discussing our plans of reincorporating foods back into our diet, so I'll talk more about that in an upcoming post, but for now, I'm dreaming of blueberry pancakes.
