Day Twenty

I worked the morning shift again on Sunday and Jason went on his first group bike ride of the year, which he was TICKLED about. The weather has been so nice so he was thrilled to be outdoors on the bike mid March. He left the house prior to 7am, so I made breakfast for myself and started dinner in the crockpot before heading out.



Breakfast: Spinach Scrambled Eggs and Bacon
Snack: Apple with Almond Butter
Lunch: Leftover Shrimp Tacos, Veggies and Guac, Applesauce
Dinner: Pork Roast with Skillet Potatoes and Roasted Brussel Sprouts
Snack: Almond Butter and Bananas

The Pork Roast was perfectly tender when I got home from work, and I actually stopped at Costco on the way home also. I picked up some more veggies and eggs to get us through the last ten days... Speaking of which, ONLY TEN MORE DAYS! How crazy is that, we are almost done with this program and my how much we've learned about our eating. Granted, we still have a third of the way to go, but we both still have cravings and interest in non-compliant foods. This isn't a way we intend to continue eating 365 for a few reasons.

We do hope to reintroduce all the foods we have eliminated over the program, and hope to suffer none or minimal side effects. Neither of us suspect to have any food allergies or intolerances, but we will have to wait and see. We plan to continue eating a higher protein diet than we were prior to Whole30, and we've always had an emphasis on plant based eating. Adding pastas, rice, quinoa and beans or legumes in moderation adds not only variation to our meals, but also allows us to stretch our monthly grocery budget a bit more conservatively. I would be lying to say that eating this much high quality and organic meats, seafood, eggs, and produce didn't increase our grocery bill this month. There is a phrase out there the says "pay the farmer or pay the doctor". I do believe in the concept that healthy eating can dramatically decrease the amount of medical complications one will endure over their lifetime. I also believe in the saying, "you can't out exercise a poor diet", which is why moderation is so important moving forward. We want to enjoy the guilty pleasures in life, but we also know that if we have gone 30 whole days without any sugar or white flour products, we can most certainly reduce the frequency in which we enjoy them. And if we ever find ourselves falling into the sugar trap (or any poor quality rut) we can always do another Whole30 to reboot and get back on track!
