Day Nine

 
I think Day Nine's menu was our most successful thus far! We used up some of Jason's super spicy pork chops in our omelets, fired up the oven for lunch, and had more spinach again today. The almond crusted chicken fingers were a huge hit, so much so that Jason deemed them "the best chicken fingers we've ever made". That, my friends, made this girl happy! I would be lying if I didn't admit to devouring nearly my entire plate before remembering the photo... and for that, I am only somewhat sorry.




Breakfast: Spicy Pork, Red Pepper and Spinach Omelet, Pineapple
Lunch: Almond Crusted Chicken Fingers with Garlic Paprika Aioli, Oven Roasted Sweet Potatoes with Bacon, Applesauce
Snack: Apple with Almond Butter
Dinner: Spinach Salad with Bacon, Leftover Chicken and Hard-Boiled Egg, Veggies with Guac, Apple
Snack: Banana Chia Pudding


My mouth is watering right now reliving those chicken tenders... and the garlic paprika aioli?!?!? Out of this world. I could smear that on everything, but I'll try to refrain. Jason is a total ketchup kinda guy. Has very little interest in other condiments, except for the jalapeño slaw and aioli used on his beloved Honey Butter chicken sandwich. But he even put the ketchup BACK in the fridge once he tasted this, and this is right about when my happy dance broke out. :) Ahh, it really is the little things that make me happy.
