Day Eight

The earlier mornings and more energy continued on into Day Eight! We ran to the post office, a bike shop and even haggled with Verizon for over an hour before lunch. We bought a huge container of spinach at Costco on Monday, and we've been adding it to everything. Jason chopped some up and added it to our eggs for breakfast, we had a spinach salad for lunch, and I even took a small spinch salad along with some leftovers with me for dinner. Lookout Popeye! 



Breakfast: Scrambled Eggs with Red Peppers and Spinach, Leftover Italian Sausage, Pineapple
Lunch: Spinach Salad with a Creamy Orange Dressing, Bacon, Shallots, and Hard Boiled Egg, Apple with Almond Butter
Snack: Go-Go Squeeze
Dinner: Leftover Salmon and Brussel Sprouts, Spinach Salad with Pepitas, Pecans, Apple, and Orange Vinaigrette, 
Snack: Banana Chia Pudding with Pecans

Jason is officially down two belt holes and I am down one. Part of the rules of Whole30 are not stepping on the scale during the program. This rule is in place to teach you that health is about way more than numbers on a scale, and that you should focus on how the food you are eating makes your body feel, rather than get caught up in a number. I can feel my body composition changing, and am no longer experiencing any ache or muscle pain in my back, mainly my scapula, that had been feeling knotted up by for months, which I am thrilled about. How about those for #nonscalevictories less than a third of the way through?!?!?
