One week in and it's our shared day off of work. The means errands and groceries, meal prep and Netflix happening here. I'm loving that we are both waking up earlier than ever, and rather than dragging through the first few hours of our day, we are being rather productive! After breakfast we set out to the stores, and stocked up on more fresh produce, nuts, meats and eggs. We even made it to Costco almost an hour before they opened! Ha! So we went on to Whole Foods in the mean time and were able to kill a bit of extra time browsing and reading labels. We came home and chopped, prepped, washed and organized our food for the week, made a delicious Chinese inspired lunch and relaxed for the afternoon. By relaxed I mean took a 3 hour nap on the couch. Well, I did. Remember that timeline I shared a few days back about what to expect on the Whole30? Yea, they say that Day Six and Day Seven you will basically feel that you could crawl under your desk and nap for days. And they were right. Holy cow.
Breakfast: Scrambled Eggs with Red Peppers, Italian Chicken/Turkey Sausage, 2 Oranges.
Lunch: General Tso Style Chicken and Broccoli, Apple and Almond Butter, Veggies and Guac
Snack: Applesauce
Dinner: Baked Salmon, Skillet Potatoes and Oven Roasted Brussel Sprouts
Snack: Warmed Bananas with Almond Butter
The General Tso Style Chicken was really tasty, and relatively simple. We missed the traditional crispy breading, but the flavors were rich and filling. When we were at Costco in the produce section, Jason turned to me and said, "Can we get brussel sprouts?" I may or may not have had a sparkle in my eye and an extra pep in my step when I replied, "YEA WE CAN!!" I can only imagine this to be the same prideful feeling parent's get when their two year old asks for carrot sticks instead of a cookies as a snack. :)))))
AND THAT SALMON!! omg, I didn't even think I really liked salmon, I knew I could tolerate it, but this was amazing! So super simple too! We used the Pioneer Woman's method of baking it at WOW! So delicious, and there was even some for leftovers tomorrow! And as a snack I was wanting something warm, so I heated some coconut oil as a healthy dose of fat in a skillet, added a sliced banana and cooked til warmed through, and topped with almond butter. This kept me satisfied and fulfilled until morning, and was pretty tasty to boot.
