Day Eleven

Yesterday marked Day Eleven, and I'm going to admit that it was a rather lazy food day here. We had acquired quite a few varieties of leftovers, so rather than cooking we just pieced our meals together that way. This being said, leftovers don't make for very flattering photos.


Breakfast: Smoothies of Kale, Almond Flour, Almond Milk, Orange Juice, Berries and Spinach
Lunch: Butternut Curry Soup (with added chicken and coconut milk for some protein and good fats), two oranges
Dinner: Spinach Salad with Hard-Boiled Eggs, Oranges, Red Peppers and Creamy Orange Dressing, Leftover Spaghetti Squash with Italian Meatballs
Snack: Banana Chia Pudding


Now just because I didn't have photos of our meals, I am not leaving you high and dry. I wanted to show a few of the shortcuts we have found to be very helpful in both saving time and energy with this program. I had mentioned applesauce, Go-Go Squeeze, and Guacamole as a few items we've used to supplement meals and snacks in addition to our emergency LaraBars. Here's what those all look like:


The applesauce cups are 100% organic and come in a case of 40 cups for $11.79 at Costco. The Go-Go Squeeze pouches are a variety pack of flavors like Apple, Apple Cinnamon, Apple Banana and Apple Strawberry, are come in a case of 24 for $10.49 at Costco. Yes, the do look like something you would give your toddler, and they totally can be (and are marketed to be) but at the end of the day, they are just naturally flavored fruit purees. The Guacamole cups are by Wholly Guacamole and came in a 24 count box for $10.99. Each cup each 100% organic and 100 calories of healthy, good for you fat. When it comes to eating raw veggies, I have to have some sort of dip, and since hummus and ranch are out, this was a great alternative. I also found the larger bottles applesauce at Aldi yesterday for $2.79 each. We are using the bottled version at home and the cups for on the go, considering that the bottled applesauce is $0.05 cheaper per the same sized serving. Yes, I realize a nickel isn't that much, but it's $2 difference in the cost of the entire case. Think about if you overpaid by $2 for every item you put in your shopping cart... that would really add up!




Oh! And the hot sauce that is pictured, we found that for $3.69 at Whole Foods. We did have to do quite a bit of searching for a compliant list of ingredients, but it was worth it. I used it in our Smoked Paprika Aioli I served with the Almond Crusted Chicken Fingers.
