Day Sixteen

Day Sixteen, Day Sixteen... Nothing all that exciting happened on this particular day. Jason got up early and did a bike workout indoors, we ate breakfast and watched the previous night's episode of Chicago Fire (this is a typical Wednesday morning tradition) and then we ran a couple errands so he could get his hair cut, I could get my rings cleaned and pick up a few things for the wedding before we made lunch and headed off to work.




Breakfast: Omelet with Red Bell Peppers and Spinach, Tomato Basil Sausage
Lunch: Oven Baked Salmon, Roasted Cabbage, Skillet Potatoes, Applesauce
Snack: Veggies and Guac
Dinner: Butternut Curry Soup, Roasted Cabbage, Banana
Snack: Freeze Dried Strawberries (for me) and Applesauce (for Jason)

This was both Jason and I's first experience with cabbage. I guess it was one of those veggies I always heard my grandparent's talk about in the form of cabbage and onions, and there is nothing about that that sounds even remotely intriguing. For this reason, I guess I never really thought cabbage was for me, But when I found a large head of organic cabbage at the produce market last week for $1.19, I decided I should give it a shot. I found this recipe on pinterest for how to roast it with garlic, salt and pepper. My only note is to keep an eye on it the last 30 minutes, making sure that as you aim for that nice browned exterior it doesn't become black char. Each oven is a little different, so be sure to keep a look out, ours only took about 20 minutes after flipping. The cabbage turned out to be so good, that I ended up eating the second half of it for dinner last night! I hadn't really planned on doing so, but hey, I don't recall ever hearing of someone ending up morbidly obese or with cardiovascular issues from over-consuming cabbage.
