HALFWAY THERE!! I can't tell you enough how looking back on the last 15 days doesn't seem like all that difficult. Sure, we've had days of more intense cravings than others, we've had dreams about candied pecans (me) and donuts (Jason), and we admitted as we go into bed last night that we were getting a little bit bored and are ready for the day that we can add things like rice or quinoa back into our meals (gasp... a whole grain is such a scandalous thing to be thinking of!). 30 days sounds like a long time, but the days have actually been flying by. In the grand spectrum of things it actually isn't all that long when you think about all the benefits your gaining. You have to wait (usually) at least 6-8 weeks for your tax refund, 6 months for a passport, 16 years to drive, 18 years to vote and 21 years to drink... 30 days isn't that long at all.
Breakfast: Banana
Lunch: "Burgers" with Lettuce, Tomatoes, and Smoked Paprika Aioli, Sweet Potato Oven Fries
Snack: Bananas and Applesauce (for Jason), Frozen Smoothie Pop (for me)
Dinner: Spaghetti Squash and Italian Meatballs (for Jason), Leftover Spinach Salad, Almonds, Apple with Almond Butter
Snack: Sautéed Green Beans with Toasted Almonds
Yes, I ate sautéed green beans as a snack last night. Who am I becoming? Green Beans have long been one of my least favorite vegetables. Growing up I would only eat them the way my Grandma Carol made them, which was a can of green beans cooked in a skillet with some olive oil and a packet of crushed Ramen noodles (the chicken flavor). The noodles got crispy and toasty and the green beans took on a delicious flavor... but then I learned about all the things that Ramen noodles are made of and decided I was going to have to let that tradition go. So after a friend's wedding that served fresh green beans cooked with almonds, I came to terms with the fact that this is the best alternative and have every now and then enjoyed them this way.
Have you noticed how many bananas we've been eating this week? Well, Jason went out to run errands while I worked last Sunday. I asked him to go to Costco and told him I had left the list on the counter. Since we grocery shop at multiple stores each week, I typically write the list on one sheet of paper, divided up by store. (Insert the OCD jokes here). I had already begun writing the things I needed to get later this week at Aldi and Stanley's on this list. I didn't request Jason to go to anywhere but Costco, but since it was on the list, he thought I had that expectation. Long story made shorter, we ended up with an abundance of bananas. Abundance, in this case, is defined as about 8 pounds. Hey, at least we like bananas.
